Before the coronavirus happened I was training for a triathlon on the big island. Like everything else, that got postponed. As a triathlete the biggest question I get is “What do you eat during the race?” The answer is anything I can fit in my bike jersey - aka energy bites! These delicious things are perfect for hiking, races, beach snacks, long flights, etc. They’re so good and can be made in hundreds of different combinations. Here is the base mix I use - your add ins can be endless!
Serving: Makes about 20 1 inch balls
Recipe:
· 3 Cups of Oats
· 1 Cup of Natural Peanut butter (I used PB2)
· 3 Tbsp of Chocolate Plant Based Protein Powder
· 1/4 Cup of Honey
· 1/3 - 1/2 Cup of Water
Add Ins (1/2 cup of each):
· Chocolate chips
· Dried fruit
· Cacoa nibs
· Coconut Flakes
Directions:
Mix everything together in a stand mixer or bowl and roll into 1 inch balls.
