This One-Pot Orzo Soup is perfect for a rainy day or chilly fall night.
Ingredients: (Serves 4)
- 2 Zucchinis, diced
- 4 Garlic cloves, minced
- 8oz Fire roasted diced tomatoes in juice
- 12oz Orzo pasta
- 4tsp Broth concentrate- vegetable or chicken
- 1oz Tomato paste
- 2oz, Sherry cooking wine
- 4oz Heavy whipping cream
- 16oz Italian pork sausage links
- Seasoned croutons
Directions:
1. Mince garlic cloves & quarter zucchinis then cut into 1/2" dice.
2. Place a large pot over medium heat with olive oil, while your oil heats remove Italian sausage from casing or chop into small bits and then add to pot & cook for 6-7 mins or until all pink is gone. Then place the sausage to the side on a plate.
3. In your used pot add the garlic and tomato paste stirring constantly until garlic is fragrant – 30 secs or less. Add sherry and reduce for 1 minute. Add fire roasted tomatoes, broth concentrate, ¼ tsp of salt and 5 cups of water to pot and bring to a boil.
4. Once boiling, stir in zucchini and orzo pasta. Return to a boil and boil for 8-10 mins or until orzo is tender. Add the heavy whipping cream and sausage into the pot and combine and simmer for 5 mins. Place soup into bowls and top with croutons. Cheers!
