Sunrise Shrimp "Poke" Bowl



This Sunrise Shrimp Bowl is a take on my all time favorite poke bowl! I switched the meat to shrimp because I know fresh ahi isn’t easy to find elsewhere. I also changed the traditional ingredients for clean ones. Cheers!

Servings 2

Ingredients:

· 1lbs Uncooked Shrimp

· 1tbsp of Coconut Aminos

· ½ tbsp of Sesame Oil

· 1 cup of Rice

· 2 tbsp Sir Kensington’s Organic Mayonnaise

· 2 tbsp Sriracha Sauce

· 2 Ripe chopped Avocados

· Unagi (eel sauce)

o The last two ingredients might be hard to find on the mainland. I included Amazon links to purchase or you will have the best luck looking in an Asian market.

Directions:

· Mix coconut aminos and sesame oil and pour over the shrimp. Place in the refrigerator for 30+ minutes.

· Cook the rice

· Make your spicy mayo sauce - in a bowl mix 2 tbsp of Sir Kensington's Organic Mayonnaise and 2tbsp of Sriracha Sauce

· After 30 minutes pull the shrimp out of the refrigerator and sauté

· After shrimp are cooked, combine shrimp with spicy mayo sauce

· Put rice in a bowl, add the shrimp and top with chopped avocado, furikake rice seasoning, and Unagi sauce
